Standing Rib Roast
on the Weber Kettle

This week we did a standing beef rib roast on the Weber Kettle with our Rotisserie attachment. This turned out amazing, the crust was great and using the rotisserie there was no need to reverse sear! Give this recipe a try, we are sure you will enjoy it!
• 5 to 6 LB Standing Beef Rib Roast
• 2 TBSP of Worchester Sauce
• 2 TBSP of All Purpose Rub (we used Boars Night Out White Lightning)
• 2 TBSP of Beef Rub (we used Steak Princess Beef Rub)
Get your kettle setup for indirect cooking at 350 degrees. We used our rotisserie attachment for this cook as well. We placed two chunks of Post Oak on the coals for added flavor. Prep your roast by applying the Worcestershire Sauce and Rubs. Let the roast set for at least 15 minutes. Insert the spit rod and forks into the roast, placing them so the meat is centered. Place the roast on the kettle and cook for 1.5 to 2 hours or until the meat reaches your desired temperature.
Horseradish Cream Sauce
• 1/2 Cup of Sour Cream
• 2 TBSP of Mayo
• 2 TBSP of Apple Cider Vinegar
• 2 TBSP of Horseradish
• 1 TBSP of Fresh Chopped Green Onions
• Salt & Pepper to Taste
Combine all of the ingredients above into a bowl and whisk together thoroughly until the sauce is creamy. Add salt & pepper to taste. Store in the refrigerator until ready to serve.
