Double Smoked Ham

This is an easy double smoked ham recipe; you can use any smoker and get great results! For this cook we used our Cotton Gin smoker. We cooked indirect at 250 Degrees with just a few oak chunks for the smoke. You can use the glaze recipe we provide or create your own!

 

• 7-8 LB Spiral Sliced Ham

• 1/8 Cup of your favorite BBQ Rub

• 1/3 Cup of Brown Sugar

• 1/4 TSP of Nutmeg

• 1/4 TSP of Ground Cloves

• 1/4 Cup of Mustard Sauce

• 1/8 Cup of Cherry Heat by Daigle’s

• 1/8 Cup of Pineapple Heat by Daigle’s

• 1/4 Cup of Honey

 

Once your smoker is up to 250 degrees, coat the ham liberally with your favorite BBQ rub. We placed the ham on a rack, then placed onto the center of our smoker. The ham is already fully cooked so you bring it up to 150 degrees. While the ham is getting its smoke bath, you can mix up the glaze. Add the remaining dry and wet ingredients above to a sauce pan. Bring the mixture up to a light simmer for about 15 minutes. Remove from heat and set aside. Once the meat temperature reaches 150 degrees, apply the glaze. We poured it over top and let it run down the sides. Remove the ham after your glaze has setup and let stand 10-15 mins prior to cutting!
