Pork Steaks

on the Cotton Gin Smoker

 

This was one of our easier recipes, but probably one of the tastiest we have done! This week we used the Cotton Gin Smoker with some Post Oak wood chunks and Fogo Charcoal. We cooked these indirect at 275 degrees.

 

·         4 Pork Blade Steaks

·         1/4 Cup of your favorite BBQ Rub (We used Steak Princess Rapunzel’s Sweet Rapture)

·         1/4 Cup of Blues Hog BBQ Sauce

·         1/4 Cup of Blues Hog Tennessee Red Sauce

·         1/4 Cup Honey

 

For this recipe we brined the pork steaks in the same recipe we used for curing our ham.

After brining we trimmed away any loose fat and silver skin. We patted the steaks dry and applied our BBQ Rub, we did not use a binder.

We smoked the pork steaks for one hour and then flipped them for another 45 minutes.

We pulled these off the smoker and wrapped them with Honey and the BBQ Sauce in foil. Place them back on the smoker for about 45 minutes and then check them.

Glaze with the sauce mixture on both sides, remove and let rest for 5 mins and enjoy!
