St. Louis Style Ribs

St. Louis Style Ribs on the RecTeq

As the competition season approaches we wanted to practice a couple recipes. Today we are trying some St. Louis Style Ribs on the RecTeq. Ribs of any sort are one of our favorites to cook. Today we used a simpler recipe below that can be done utilizing any smoker or grill.

 

·         2 Racks of St. Louis Ribs

·         1/8 Cup of your favorite BBQ Rub (We used Killer Hogs)

·         1/8 Cup of your favorite Honey BBQ Rub (We used Kosmo’s)

·         1 Cup of Blues Hog BBQ Sauce

·         Yellow Mustard for Binder

·         1 Cup of Blues Hog Tennessee Red Sauce

·         6 TBSP of Butter

·         1/4 Cup Brown Sugar

·         1/4 Cup of Honey

 

We set our RT 700 to 225 degrees using Oak and Hickory Pellets.

While the smoker was coming to temp we prepped the ribs removing any excess fat and the membrane. We also squared up the ribs so they would cook uniform.

We then applied the yellow mustard to ribs for the binder. You want to make sure to cover both the top and underside of the ribs, including the sides.

I then applied the Kosmo’s Honey Rub to all sides and then Killer Hogs the BBQ Rub.

We then placed the Ribs on the smoker, at about 1 ½ hours in we spritzed with apple juice/apple cider vinegar.

After another 45 mins our color was where we wanted it and the bone ends were becoming exposed, then we wrapped the ribs.

For this cook we used brown sugar, butter and honey and wrapped the ribs in two sheets of foil each.

We put the ribs back on the smoker for about 2 hours until ribs were probe tender.

We removed the ribs from the foil and mopped with our sauce mixture. We left the ribs on the smoker for another 45 minutes until the sauce was set. Be careful on this step as the sugar in the sauce will begin to darken and burn if you are not careful.

We removed the ribs from the smoker to rest for 10 mins. Sliced and served!
