Review of the Cotton Gin Smoker

This week we reviewed one of favorite smokers, it’s the Cotton Gin drum smoker! This thing is a beast!

The engine on this smoker is made up of three components, the heat shield, charcoal basket and the baffle plate.  All three come standard.  The baffle plate is adjustable by bending the tabs to regulate the heat flow.  Our model came with a hanging system that was custom for our smoker. This gives you the ability to hang up to 12 racks of ribs in the smoker comfortably. The drum itself is 16 gauge steel.  The powder coated shell can withstand 600 degrees on for most colors and up to 1200 degrees for black. Also the silicone probe port on the side is standard on all models.

This is a solid built smoker made by a Texan.  You can cook low and slow or hot and fast the versatility is amazing.  We use ours multiple times a week without fail. It’s easily mobile and can be used at home or for competition cooking.

For the review we did a quick and easy cook.  The recipe we followed was simple.  We provided that below.

 

Korean BBQ Chicken

2 lbs. Boneless Skinless Chicken Thighs

2 Cups of your favorite Korean BBQ Sauce (we used Korean BBQ Sauce & Marinade by bibigo)

Remove any fat from the chicken and skin that was left.  Place chicken in a container and cover for at least 3 hours, overnight is best.  We set the CGS up to run at 375 degrees direct cooking with lump charcoal.  Cook the chicken until it reached 165 degrees and remove to rest for 10 mins.  ENJOY
