Mexican Street Corn
Our family really enjoys this Mexican Street Corn recipe. The corn (Elote) is fresh and tasty and pairs well with summertime. You can add a number of different cheeses at the end, we kept it simple for this one. Give it a try, we are sure you will enjoy it!
· 12 Whole Ears of Corn
· 1/2 Cup of Mayonnaise
· 1 TSP of Chili Powder
· 1 TBSP of Sriracha Sauce
· 1 Lime, Juiced and Zested
· 1/2 Cup Fresh Cilantro
For the sauce, in a small bowl add the mayo, chili powder, Sriracha, and lime. Mix thoroughly until combined. We used our gas grill but you could use any grill for this recipe. We had the grill on high and added our corn un-husked. Cook for 5 minutes and then using heat gloves or tongs start spinning the corn until the outside of the husk is golden brown. Once husk is golden brown pull back the husk and remove any corn silk, place the corn back on the grill, coat one side with your sauce. After a couple minutes rotate the corn and coat the other side with the sauce. Remove corn from grill and garnish with your choice of cheese and fresh cilantro!
