Pork Belly Burnt Ends

This recipe is simple and quick, it makes for a great appetizer. I did this recipe on a pellet smoker but I also used my BGE for this as well.

Give it a try I think you will enjoy them.

·         2 LBS of Pork Belly in a slab.

·         Cooking Spray

·         1/2 Cup of your favorite BBQ Rub

·         3/4 Cup of Light Brown Sugar

·         2 Cups of your favorite BBQ Sauce

I started my pellet smoker and set it on 275 degrees. I cut up the pork belly into 1 ½ cubes and placed them in the bowl.

Add both the rub and the brown sugar. Mix the ingredients thoroughly. After the pork belly is coated well leave rest for 15 mins.

Coat a chicken rack with cooking spray and place the pork belly on the rack leaving space in between each piece.

Place in the center of the smoker and cook for two hours.

After two hours I removed the pork belly and placed into a bowl and covered with BBQ sauce.

I dumped the morsels of goodness into an aluminum pan and placed them back on the smoker.

Remove from the smoker after 15 mins and enjoy!
