Smoked Trout

 

Cedar Plank Steelhead Trout W/Mango Salsa

This is an easy recipe that can be used on simply any grill or smoker.

Today we are using our Pellet Grill by Z Grills.

Ingredients:

2 Fresh Steelhead Trout Fillets

2 Cedar Planks (Soaked in water for two hours)

1 TBSP of Salt

1 TBSP of Ground Black Pepper

1 TBSP of Garlic Powder

4 TBSP of Wilkes Meat Fin & Fish Seasoning or your favorite fish seasoning.

2 TBSP of Olive Oil

I first rinsed the filets in cold water, then patted them dry.

I then lightly seasoned the fish with salt, pepper and garlic. For this recipe I also used Wilkes Fin & Fish Seasoning.  You can use your favorite as well.

I set my pellet smoker to 350 degrees.  I was using a pellet blend for this recipe. Once the temperature in the pellet grill reached 350 degrees I set both planks on the grill and left a gap between the two for air flow. After 15 mins I checked the fish with my Javelin Instant Read Thermometer.  I gave the fish 10 mins more and pulled it. 

Mango Salsa

Ingredients:

3 Mangos Diced

1 Medium Bell Pepper

½ cup chopped red onion

½ cup diced cucumber

¼ cup fresh cilantro shopped

1 Jalapeno seeded and diced

1 lime large, juiced

¼ tsp salt 

Combine all ingredients together and drizzle with lime juice.  With a large spoon stir the ingredients and salt to taste.
