Smoked Whole Chicken on the Drum

 

This is an easy recipe that can be used on simply any grill or smoker. I highly recommend trying out one of these drums. It's easy and at the same time a lot of fun!

Ingredients:

1 5 Pound Whole Chicken

1 TBSP of Salt

1 TBSP of Ground Black Pepper

1 TBSP of Garlic Powder

4 TBSP of Weber Kick’n Chicken Rub

2 TBSP of Olive Oil


You can pick up whole chickens at any grocery store or your local butcher shop.  For this recipe I used one 5 pound bird. I discarded the giblets and washed the chicken very well under cool water and then patted dry inside and out using a paper towel.   Trim off any excess skin or fat. Spray or wipe entire bird down with olive oil making sure to cover all areas.  This will help crisp up the skin and hold your seasonings onto the chicken.

Once the chicken is well oiled, rub the chicken with salt, pepper and garlic. I then used a barbecue rub from Weber, Kickn Chicken.

Start your fire in your drum.  For this recipe I used Kingsford Briquettes Charcoal and 3 chunks of apple wood, to ignite the charcoal I used Royal Oak Tumbleweeds.  You can also use a charcoal chimney as well.  

Once the temperature in the drum reached between 325 – 350 degrees using a chicken rack I placed the chicken on the drum and closed the lid. After 45 minutes I inserted my wireless probe to monitor the temperature.  At this point I also spritzed the chicken with apple juice. Thirty more minutes passed and I spritzed the chicken again.  After about 90 minutes my probe alarm went off and the temperature had reached the desired 165 degrees. I removed the lid and checked the chicken for doneness in various sections of the bird using my instant read thermometer. I removed the chicken on to a cookie sheet to rest tented with foil.  After a thirty minute rest the chicken was ready to slice or pull!
