Smoked Cornbread

This is a very basic cornbread recipe. You can add any ingredient you desire to kick this up, like jalapenos. Our family enjoys cornbread with Chili and we feel Cast Iron works perfect for turning out great cornbread.
• 1 Cup of AP Flour
• 1 Cup of Corn Meal
• 1/2 TSP Salt
• 1/2 TSP Baking Powder
• 1/2 TSP Baking Soda
• 1/2 Cup of Sugar
• 1 Cup of Buttermilk
• 2 Eggs
• 2 TBSP Bacon Fat
Preheat your smoker to 375 degrees. Place your cast iron pan on the smoker to preheat as well. In a large bowl combine all the dry ingredients thoroughly. In a separate bowl whisk together the buttermilk and eggs until well incorporated. Add the buttermilk mixture to the dry ingredients and combine. I ended up adding a bit more buttermilk to thin out the batter. Once preheated, remove the cast iron from the smoker and add the bacon fat. Once melted, add the corn bread batter to pan and place back on the smoker for 30-35 mins or until a toothpick pulls clean in the center. Remove from smoker and let cool for 10 mins, cut and serve!
