Smoked Baked Beans
This is a family recipe for baked beans that has been in my family for many years. The use of Large Lima or Butter Beans in this recipe is largely a Pennsylvania thing. You can certainly use any type of bean for this recipe, it will be just as good!
· 8 oz. Cubed Ham
· 1 Large Onion (Chopped Coarsely)
· 3 TBSP of Olive Oil
· 1 Cup Light Brown Sugar
· 1 TSP of All Purpose Seasoning (DB 180)
· 3 TSP of BBQ Seasoning (Steak Princess Sweet Rapunzel)
· 2 ½ Cups of Ketchup
· 3 TBSP of Yellow Mustard
· 3 TBSP of Worcestershire Sauce
· 1/2 LB of Bacon Cooked and Chopped
· 4 15 oz. Cans of Butter Beans (Large Lima)
· 3 Strips of Bacon (For Top)
For this cook we used our RT 700 set to 350 degrees running a hickory and oak blend of pellets.
In a cast iron skillet, we sautéed the onions and ham until they just began to caramelize, season with 1 TSP each of the AP & BBQ Rubs.
Then incorporate the brown sugar.
Once the sugar dissolves, add the ketchup, mustard, Worcestershire sauce and cooked bacon. Mix thoroughly.
In a large pot add the beans to the sauce mixture; you want to be sure to use the juice from two of the cans of beans. Mix again thoroughly and then transfer into an aluminum half pan. Add your uncooked bacon to the top and cook for 1 ½ hours or until the beans are done.
