Breakfast Casserole
This is a protein packed breakfast option that can be made ahead or the day of your breakfast. We started making this to share with friends at our BBQ Comps and it has been a hit. This can be easily adjusted to add all the ingredients you like!
· 8 Large Eggs
· 1/4 Cup of Heavy Cream
· 1/2 Sweet Onion Diced
· 1 LB of Breakfast Sausage
· 1 Cup of Diced Mushrooms
· 2 Cups of Fresh Spinach
· 1/2 TSP Each of Salt, Garlic Powder, Pepper and Dried Parsley
· 1 Cup of Cheddar Cheese
· 1 TBSP of Hot Sauce
Preheat your oven to 400 Degrees. Brown the sausage and remove any excess fat. Add the onion and mushrooms and cook until tender. Add the spinach until wilted and fully incorporated, remove from heat to cool completely. Mix your eggs, heavy cream, seasonings, hot sauce and half of the cheese until thoroughly combined. In a greased 11 X 7 Casserole Dish add the meat mixture, pour the egg mixture over top. Be sure that all ingredients are evenly distributed. Sprinkle the remaining half cup of cheese on top. Back for 30-40 minutes or until the eggs are done and the top is brown.
