Jalapeños Stuffed with Smoked Brisket and Cream Cheese
AND Wrapped in BACON!
A good friend of ours made these at a BBQ Contest a few weekends back and they were amazing. We made these with our own little spin. These are excellent for appetizers and would make a great
summertime finger food!
· 1LB of Chopped Brisket
· 1 Block of Smoked Cream Cheese
· 12 Slices of Thin Bacon
· 1 TBSP of your favorite BBQ Rub
· 6 Jalapeño Peppers
We set our pellet smoker to cook at 275 degrees. We cut the peppers in half lengthwise and removed the seeds and the vein. We chopped up about a pound of leftover brisket and added one block of smoked cream cheese. Mix the cream cheese and brisket thoroughly. We filled each half of the pepper with the mixture and then wrapped each with a slice of bacon. Once all peppers were filled and wrapped, we seasoned the top of each with the rub. We cooked these on our grill mats for easy cleanup. Cook for one hour or until the bacon is to your desired crispiness.
