Standing Rib Roast on the RecTeq

 

This was our first cook on the RecTeq RT 700! It turned out amazing and can be accomplished on any cooker! We got our Rib Roast from our local butcher. We had it trimmed and the bones separated and re-attached with butcher twine for easy standing while on the cooker. This recipe is simple and flavorful, cooking it at home makes it easy to control all of your audience’s preference for doneness.

 

·         1 Standing Prime Rib Roast 6-8 LBS

·         5-6 Cloves of Garlic Whole

·         2 TBSP of Rosemary

·         4 TBSP of Greek Seasoning (Spiceology Freak Greek)

·         4 TBSP of Killer Hogs AP Seasoning

·         3/4 Cup of Olive Oil

·         2 Cups of Beef Broth

 

Add all of the dry spices to a blender or food processor.

Add half of the Olive Oil, pulse to blend.

Add the remaining Olive Oil and blend thoroughly.

The mixture should have a paste consistency. Rub the entire Rib Roast thoroughly with the paste.

Bring your cooker up to 250 degrees. Place the roast on a rack on top of a half sheet pan.

Add Beef Broth into the pan. Place the Rib Roast in the center of the rack on top of the pan.

Place the pan and roast on the smoker and cook until the internal temp reaches between 115 to 125 degrees.

This will probably take 3-4 hours.

Remove the Rib Roast from the smoker and crank up the heat to between 500 to 600 degrees.

Remove the roast from the rack and sear completely on the outside until your meat reaches its desired doneness.

We took ours to 140 degrees; you can take to whatever temp you prefer.

Remove from the heat and let rest for at least 15 mins.

Slice to desired thickness and enjoy!
