Smoked Turkey

This was our first shot at smoking a Turkey, it was truly amazing! This is a simple recipe and is easy to follow. This will be our go to recipe for many Thanksgivings to come!

 

·         1 16-20 Turkey (thawed)

·         2 Gallons of water

·         2 Cups of Turkey Brine by Rodelle

·         1 Granny Smith Apple

·         1 Medium Sweet Onion

·         6 Fresh Garlic Cloves

·         3 Celery Stalks

·         2 bunches of Fresh Herbs for poultry

·         ½ Stick of butter melted

·         4 Tbsp. of Kosmo’s SPG

·         2 Tbsp. of Poultry Seasoning

 

The first part of this recipe is the brining process. We used a Turkey Brine by Rodelle. You want to boil one gallon of water and add to 2 cups of the dry brine mix in a large food grade bucket or container. Stir the mixture until completely dissolved, this should take about 15 minutes. We then added 1 gallon of cold water to the mixture and stirred again. Once the brine had completely cooled we placed the turkey down into the container, submerging completely. We covered the container and placed it in the refrigerator. You want to brine your turkey for 16-24 hours minimum.

The next day we pulled our turkey out of the brine and rinsed with cold water thoroughly. Then patted the turkey dry. I rough cut the fresh vegetables and fruit above and stuck inside the bird’s cavity. I tied one bundle of the fresh poultry herbs with butcher twine and also placed that in the turkey. I then used the butcher twine to tie the legs together and tucked the wings under the bird. Then you want to spray the entire bird with cooking spray; we used olive oil. I then seasoned the turkey with the SPG and the poultry seasoning.

 

We cooked this at 325 degrees on our pellet smoker. I placed a Meater probe in the thickest part of the breast. We basted the turkey every 45 minutes with the melted butter. Cook the turkey until the internal temp hits 165 degrees on the breast. When the internal temp is reached remove the turkey from the smoker and let rest for at least 20 minutes. Carve for serving!
