Smoked Bologna

This is an easy recipe and is good fried after it is smoked. It doesn’t really take too long and can feed a lot of people.

 

·         2 Chubs of Bologna 2-3 LBS each.

·         2 TBS of Yellow Mustard for binder

·         3 TBS of Killer Hogs The BBQ Rub

·         1/4 Cup of Honey BBQ Sauce

 

Preheat your smoker to 275 degrees. Remove the red casing from around the bologna. Using a knife make cross-hatch marks all the way around the outside of the bologna, including the top and bottom. Using a tablespoon of mustard as a binder coat each piece, then coat liberally with The BBQ Rub. Place in the smoker on a wire rack. After 1 ½ hours check the bologna, at this point we glazed using the sauce. We then cooked the bologna for another 45 mins. Remove from the smoker and let rest for at least 15 mins.

 

Slice and serve!
