Hawaiian Chicken (Huli Huli Chicken)

Hawaiian Chicken (Huli Huli Chicken) Teriyaki Chicken Thighs on the Weber Kettle

My brother brought this Huli Huli Chicken recipe home with him after being stationed in Hawaii. I have changed it just slightly but it is basically the same. This is a simple way to make some tasty chicken quickly. In my opinion it tastes best over charcoal but any grill will work. Give it try!


·         2 Cups of Pineapple Juice

·         1 Cup of Soy Sauce

·         2/3 Cup of Light Brown Sugar

·         2/3 Cup of Ketchup

·         2 Tbsp. of Sesame Oil

·         4 tsp of Fresh Minced Ginger

·         2 tsp of Fresh Minced Garlic

·         1 tsp of Crushed Pepper Flakes (Optional)

·         4 Lbs. of Boneless Skinless Chicken Thighs

First I combined all of the ingredients except the chicken in a large pot. Mix all of the ingredients thoroughly until the brown sugar is dissolved. Wash all of the chicken thoroughly and remove any excess fat or skin.

Put all of the chicken in a 2 gallon zip lock bag, pour 5 cups of the marinade over the chicken, reserving 1 cup for basting. Marinade 6 hours. I setup the Weber Kettle Grill for indirect grilling. Placed my Grill Grate on hot side and waited till the temp leveled off at 300 degrees. You don’t need to use these grates, but it my preference for appearance.

You want to flip the chicken often. The last 10 minutes you want to baste both sides of the chicken twice with the reserved marinade. This gives the chicken additional flavor and adds a great color. Remove and rest 10 minutes and serve.
