This has been a go to recipe for us for a while now. It is fresh and packed full of flavor. A simple recipe that works great for a midweek meal. Give it a try, we think you will enjoy!
· 8-10 pcs Chicken Legs & Thighs
· 1/2 Cup of Olive Oil
· Juice of one Lemon
· 2 TSP of GYRO Hero by How to BBQ Right
· 4-5 Cloves of Garlic chopped
· 1/2 Cup of Italian Parsley
· 5 TBSP of Fresh Rosemary
· 3-4 TBSP of Fresh Thyme
· 1 Bunch of spring Onions
Preheat your oven to 375 Degrees.
Clean your chicken and remove any excess skin and fat.
Place the chicken in a Ziploc Bag.
Rough chop all of the fresh herbs and place in a mixing bowl. Add your oil, Lemon Juice and seasoning to the herbs and mix to combine.
Pour the mixture over the chicken and mix to cover completely.
Let marinate for at least 4 hours.
Place the chicken into a cast iron pan and pour the remaining marinade over the top of the chicken.
Cook until the chicken reaches 165 degrees internally.
Once the chicken reaches temp, turn your broiler on and broil the chicken for 3-4 minutes, until the skin is golden brown and crispy.
Remove from the oven and serve!
