Honey Sriracha Wings and Beef Ribs on the Cotton Gin Smoker

This was a fun cook that we were looking forward to! This was our first on the Cotton Gin Smoker. We did two recipes geared at football parties, given the current playoffs. This smoker is as advertised; well-built, easy to use and fun to cook on. Both proteins turned out amazing and will be recipes we will use again.

 

Honey Sriracha Wings

Recipe by: rumrunnersbbq

·         1/2 stick of butter (recipe called for ½ stick, we used a whole to cut down on the heat)

·         3 lbs. of large wings

·         1/4 Cup of Honey (we used ½ cup for more sweetness)

·         2 TBSP of Sriracha Sauce

·         1/8 Cup of your favorite rub for dusting

·         1/2 TBSP Lime Juice

·         Splash of Soy sauce

·         Sesame Seeds for garnish

 

We set the Cotton Gin up for indirect heat between 275 – 300 degrees.

We dusted our wings with a honey rib rub and placed them on the smoker.

After 45 min we rotated the wings.

Melt the butter in a sauce pan. Then combine remaining ingredients and combine until sauce begins to bubble, remove from heat.

Once your wings reach 195 degrees remove from smoker, drizzle sauce on top and then sprinkle with sesame seeds, then serve!

These were truly amazing, perfect heat and plenty sweet!

 

Beef Ribs

·         1 – 2lb Beef Spare Ribs

·         3 TBSP of Worcestershire Sauce

·         1/8 Cup of Kosmo’s Texas Beef Dry Rub

 

Trim ribs of any fat and remove membrane.

Coat with the Worcestershire Sauce.

Cover the ribs liberally with the Beef Dry Rub.

Place onto smoker for one hour at 275 degrees.

At 1 hour check ribs and rotate if necessary.

Let the ribs cook for another hour or until beef is drawing back from the ends of the bones.

Wrap the ribs with a small amount of liquid, I used honey because it was handy.

For wrapping you can use foil or butcher paper.

Cook wrapped until probe tender.

Remove from smoker and serve!
